Stoking Hour:
From 3-4 pm daily, we pause pizza service to stoke our coal-fired oven, cleaning out spent coal and replacing it with fresh coal to maintain the perfect cooking temperature. This process is crucial to ensuring the unique flavor and crispy crust of our award-winning pizza.
